Crispy, buttery cookies with a rich coconut flavour. Also happened to be best seller in my home bakery.

Whisk soft salted butter, powdered sugar and vanilla extract using a balloon whisk or electric beater until the mixture becomes light and fluffy in texture and turns pale in colour.
Specially in Eggless Baking, its very important to sift the dry ingredients.
So, in a sieve, add all purpose flour, corn flour, baking powder and baking soda. This will help to remove an impurities and create aeration.
Add desiccated coconut on the sifted dry ingredients.
Add milk and using a spatula, bring the dough together.The dough should be soft. Avoid over kneading of the dough else cookies will spread a lot.
Refrigerate the dough for at least 1 hour. It will help you to shape the cookies well.
Take about 1 tablespoon of cookie dough and shape them in balls. Flatten the cookies a bit . Make sure there are no crackers arond the edges of cookies.
Coat the cookies with desiccated coconut all over.
This step is very crucial in baking.
Pre heat OTG at 160 degree celsius for 8-10 minutes.
Mode of preheating is lower rod ON + upper rod ON + fan ( if any )
Once you have shaped all the cookies, and your oven is also pre heated.
Place them on a tray lined with silicone mat or thick parchment paper. Keep gap of 4 fingers in between cookies.
Bake at 160 degree celsius for 20-22 minutes.
Cookies should turn golden brown from he edges.
Right after baking cookies will be slightly soft from centre.
So, let them come to room temperature. Cookies will turn crispy once cooled down completely.
Using oven thermometer will help you to determine exact temperature in the oven. Turn the tray around once, after half baking time because oven might have a hot spot and could lead to over baking or burning cookies from one side.
Whole wheat flour could be used in 1:1 ratio of All purpose flour. Add more milk to adjust the consistency of dough. One way to check the correct consistency of dough is by taking small portion of dough, roll into a ball in between your palms and insert knuckle of your finger in it. If you see cracks then there is a need to add more liquid.
